how do i mess around with this? looks like after auto leveling the filament just falls onto the bed

Z Offset can be adjusted under Settings & Controls -> Settings -> Printer -> Print Area.

any recomendations for proceeding? my setting currently is at 0 but the nozzle is rather far off the bed

You can adjust the Z offset in the setting noted by Ryan.

If you are far from the bed, you will want to use a negative z number.
